B: We take in about $4,000 a day.
A: That’s before expenses?
B: That’s before expenses.
A: What are the expenses?
B: Well, we have 15 staffers.
A: Can you break them down?
B: We have two bartenders, two chefs, four waiters, four chef’s helpers, and two maitre d’s.
A: That’s only 14, I think.
B: Oh, yes, we have a full-time handyman.
A: Who does the books?
B: I handle the payroll and order the food and alcohol.

B: That’s gross revenue.
A: What are the bills?
B: For starters, we have 15 staffers.
A: What are their positions?
B: There are two bartenders, two chefs, four waiters, four chef’s helpers, and two maitre d’s.
A: That only totals 14.
B: I forgot the full-time handyman.
A: Who handles the accounting?
B: I take care of all the financials.

A: Who’s your accountant?
B: I’m the one who does that.
